strawberry cupcakes: let's get bakin'.


The British summer is coming!! The British summer is coming!! Although, apparently we're IN it. I've never known an April to be so chilly!

Either way...

I'm SO excited for the summer! Can you tell? I have never known berries like the berries that grow in the British countryside. Do you remember these lines from Charlie and the Chocolate Factory?

Willy Wonka says, "The strawberries taste like strawberries, the snozberries taste like snozberries!"

Then Veruca responds with, "Snozberries! Who's ever heard of a snozberry?"

Oh Roald Dahl, you witty witty man! But seriously, have you ever heard of a gooseberry? I hadn't until I lived here. Ha!

Now let's talk strawberries. Last summer, I scoured the internet looking for a natural, fresh strawberry cake recipe. I wanted to make use of the best of the British strawberries*! And then I found one from Jason & Shawnda's Confections of a FoodieBride. It was simply perfect! It involves pureeing the strawberries and then adding it, with the usual guys of flour, sugar, butter, etc, and then voila! Perfection.
*The berries used in this demonstration come from Spain as it's not berry season in the UK yet!

Now, let's get bakin'!






See my blunder cakes? Tee hee hee. What can I say? Nip off the sides and frost! They taste so good even my husband didn't notice!
